Well for me it would be Evagelion but also Gundam SEED, but only for a few episodes, namely the episode "The Descending Sword".

Blood+, Gunslinger Girl,and L'Chevalier d'Eon. Fate/Stay Night was pretty gory too.

for me it would definitely be elfen lied..

i think it would definately be

AKIRA, BERSERK, Fist of the North Star, and maybe Hellsing they were even more bloodier than the animes out right now cause long time ago they didnt have that viewers aggression law where they had to tone down on the blood being shown.

Evagelion, End of Eva, Samurai X: trust and betrayal, Blood+, Samurai Champloo had its moments too.

rurouni kenshin first OVA, Speedgrapher, I would consider Hunter X hunter OVA to be pretty gory too. Though I haven't seen Genocyber, I think it is extremely brutal and violent too.
